A creamy, herbaceous chilled soup with avocado and cucumber, elevated by Verger Créole’s curry tree syrup and crispy curry leaves.
Chilled Avocado & Curry Tree Syrup Soup
Serves 4–5
Ingredients:
- 2 large ripe avocados
- 1 medium cucumber, deseeded
- 4 tablespoons olive oil
- 1 garlic clove
- 4 sprigs of fresh coriander (cilantro)
- Juice of 1 lime or Meyer lemon
- Salt, pepper
- 10 fresh curry leaves
- 4 tablespoons Verger Créole curry tree syrup
Instructions:
Blend the following ingredients until smooth: avocados, cucumber, peeled garlic, coriander, lime juice, and olive oil. Adjust seasoning with salt and pepper to taste.
In a small saucepan, fry the curry leaves until crisp, then drain on a plate lined with paper towel.
To serve, pour the soup into bowls, drizzle one tablespoon of curry tree syrup over each, and garnish with a few crispy curry leaves just before serving.
