A bright and refreshing mix of seasonal fruits, brought to life with fresh mint and the delicate depth of Verger Créole’s Curry Tree Syrup. A light, flavourful twist on a classic island dessert.

Serves: 6

Ingredients

  • 3 passion fruits
  • ¼ watermelon
  • 3 ripe local mangoes
  • 1 Granny Smith apple
  • 1 small ripe papaya
  • ½ vanilla pod
  • Juice of 1 orange
  • 100 ml Verger Créole Curry Tree Syrup
  • 4 sprigs fresh mint

Instructions

  1. Cut all the fruits into fine, even cubes (brunoise).
  2. Add the orange juice, the scraped seeds from the vanilla pod, the Verger Créole Curry Tree Syrup, and finely chopped mint leaves.
  3. Mix gently to combine. Chill in the fridge for at least an hour before serving to let the flavours come together.
